Tandoori Spiced Roasted Cauliflower
This beautifully spiced dish makes a tasty side dish or can be mixed through a winter salad to add spice and texture to your meals.
1 medium cauliflower, chopped into small florets
2 tbsp coconut oil, melted
2 tbsp organic salt free butter or ghee melted
1 tsp organic turmeric powder
1/2 tsp organic cinnamon
2 tbsp mixed spice (cardamon, fennel, cumin, lemon, garlic, onion, paprika, ginger, coriander and cayenne make a good blend)
Preheat oven to 220C
Add cauliflower florets to a large baking tray and drizzle the melted oil and butter over the top. Sprinkle salt, pepper and spice mix evenly and generously over the top, then use your hands to make sure the florets are evenly coated in oil and spice mixture.
Place in oven for 20 mins, remove and give a good stir, place back in over for another 10-20 mins. Once crisp on the outside, remove and serve.
