Summer walnut salad
A great and easy salad to prepare anytime of year.
Ingredients 2 tbsp extra virgin olive oil 1 tbsp lemon juice 1 tsp organic wholegrain mustard large handful of baby rocket 1/2 red onion 1 large avocado 1/2 cup walnuts 100g goat feta, roughly chopped or broken up Method 1. Preheat oven to 180 degrees, spread walnuts evenly on an oven tray and cook for 5 mins or until lightly toasted. Cool and roughly chop. 2. Combine oil, lemon juice and mustard in a small jar, shake to mix. 3. Place rocket, avocado, onion, feta in a bowl, top with walnuts and add dressing. Serve with any good type of protein such as grilled or baked fish, meat or chicken.
